Cuvée One brings together multiple soil types, grape varieties, and climates to create a multi-layered, nuanced wine. This classic brut blend unites five different Oregon vineyards to express the essence of Oregon sparkling:
Cattrall Brothers (Eola-Amity Hills)
Namaste (Van Duzer Corridor)
Winter's Hill (Dundee Hills)
Yamhill Springs (Yamhill-Carlton)
Sienna Ridge (Red Hill of Douglas County)
Separate base wines were made from each vineyard. Each base wine was whole cluster pressed and settled overnight. Afterward, the wines were fermented with native yeast or EC1118 in 75% neutral oak and 25% steel barrels. Base wines remained on the lees for six months. The final blend is 50% pinot noir, 32% chardonnay, and 18% pinot blanc. Secondary fermentation was done with Spark yeast.

The back of each Corollary bottle has a URL so you can learn more about the wine. The first four digits of the code at the end of the URL tell you the year and month when the bottle was disgorged. So in the example below, the wine was disgorged in December 2019 (19-12).
191201 - 750mL. Disgorged 122 cases in December 2019 with dosage of 8g/L. 18 months on the lees.
210101 - 750mL. Disgorged 115 cases in January 2021 with dosage of 7g/L. 32 months on the lees.
