We’re capping off this year’s Method Oregon Grand Tasting Weekend with a very special event produced in collaboration with our friends at Grounded Table and Naked Grazing. 🍾
Grows Together / Goes Together: LAMB EDITION is the first in our new series of seasonal lunches rooted in the vineyard. Each gathering will focus on a single ingredient grown on our land. The exploration will unfold across a multi-course menu, thoughtfully paired with Corollary sparkling wines.
Up first: lamb. We have the utmost respect for the integral role the sheep play in our vineyards and oak forests, helping to build the soil while controlling weeds and mitigating fire danger. That same respect carries to the table through thoughtful, nose-to-tail cooking where nothing is wasted and every part is valued.
The menu:
Lamb tartare
Fattoush salad with farm lettuces and sumac vinaigrette
Cous cous with saffron-soaked raisins and hazelnuts
Grilled offal salad with lemon oregano vinaigrette
Charred eggplant and marinated summer squash with tomato garlic confit
Whole roast lamb with yogurt sauce, salsa verde, and harissa
Rosewater pudding with honey syrup
Here’s who you’ll meet:
Jared Lloyd of Naked Grazing, who manages the sheep and goat herds that rotate throughout our land. Jared will talk about why grazing is such a terrific match for viticulture and how the animals help us keep the whole ecosystem in balance.
Dan and Jeanne of Corollary will share how we're approaching land and water management on our property, how those decisions affect the wine, and why animals are such a critical part of a complete permaculture system.
The chefs from Grounded Table will share their take on pairing lamb with sparkling wines.
Tickets $225/person. Book now.

We’ll be pouring from 1 to 5pm. Reservations are encouraged, but walk-ins are welcome if space is available.

Heart health touches every family—including ours. That's why we're honored to support the AHA at the 2026 Heart’s Delight Wine Tasting & Auction, a four-day celebration of world-class wine, food, and philanthropy in Washington, D.C., taking place May 6–9, 2026.
By pouring our wines alongside producers from around the world, we’ll help raise critical funds so the AHA can advance heart health research, education, and community programs—extending the spirit of hospitality beyond our tasting room and into a cause that strengthens the well-being of communities everywhere.

Hosted by The Idea Factory at the Multnomah Whisk(e)y Library, this Friday morning series brings together creative thinkers, civic leaders, and cultural changemakers for honest conversations over coffee and bagels. No slides, no scripts—just bold ideas and the people building what’s next for Portland.
This month, Jeanne Feldkamp of Corollary and Method Oregon will join CHO Wines co-founder Lois Cho and Radiant Sparkling Wine Company founder Andrew Davis in conversation with Kimiko Matsuda. We’ll explore how traditional method sparkling wine is helping shape a new chapter for Oregon wine—one rooted in innovation, place, and a broader vision for who gets invited into the story.
At the center of this conversation is a powerful question: What happens when a rural agricultural product becomes a cultural movement?
In the Willamette Valley, a new generation of sparkling wine leaders is proving that excellence in the vineyard can be matched by fresh thinking in branding, collaboration, and audience-building. Traditional method sparkling production in Oregon has grown rapidly, with Method Oregon describing a fast-growing group of producers making wines that are among the best in the world, and positioning the category as a distinct statewide collaboration.
We’ll talk about how marketing, craftsmanship, and regional identity work together; how urban audiences and rural producers can strengthen one another; and why the future of Oregon wine may be as much about storytelling and belonging as it is about terroir.
Expect reflections on innovation, access, cultural relevance, and the civic opportunity of putting Oregon sparkling on the map.
Tickets ($35) include admission to the event as well as a spread of fresh fruit, bagels & accompaniments, coffee, tea, juice and a splash of bubbles to brighten your morning. Book now.

Here at Corollary, we believe in going big. That's why July is MAGNUM MONTH!
All month, we'll be celebrating the release of our entire 2017 vintage in 1.5L magnum bottles. These wines spent 60-72 months en tirage. They are expressive, elegant, and will continue to evolve on cork for 20+ years.
Magnums are our library program and an important part of our commitment to sparkling in its highest form. The cork in a magnum lets in the same amount of oxygen as a standard 750mL bottle—but with twice the wine volume, magnums are ideal for extended cellaring.
Sparkling wine connoisseurs may secure guaranteed allocations for this and all future magnum releases as members of our Magnum Club, which is available as an upgrade to any standard club membership. The Magnum Club is limited to 20 members.
