Grows Together / Goes Together: LAMB EDITION is the first in our new series of seasonal lunches rooted in the vineyard. Each gathering will focus on a single ingredient grown on our land. The exploration will unfold across a multi-course menu, thoughtfully paired with Corollary sparkling wines.
Up first: lamb. We have the utmost respect for the integral role the sheep play in our vineyards and oak forests, helping to build the soil while controlling weeds and mitigating fire danger. That same respect carries to the table through thoughtful, nose-to-tail cooking where nothing is wasted and every part is valued.
The menu:
Lamb tartare
Fattoush salad with farm lettuces and sumac vinaigrette
Cous cous with saffron-soaked raisins and hazelnuts
Grilled offal salad with lemon oregano vinaigrette
Charred eggplant and marinated summer squash with tomato garlic confit
Whole roast lamb with yogurt sauce, salsa verde, and harissa
Rosewater pudding with honey syrup
Here’s who you’ll meet:
Jared Lloyd of Naked Grazing, who manages the sheep and goat herds that rotate throughout our land. Jared will talk about why grazing is such a terrific match for viticulture and how the animals help us keep the whole ecosystem in balance.
Dan and Jeanne of Corollary will share how we're approaching land and water management on our property, how those decisions affect the wine, and why animals are such a critical part of a complete permaculture system.
The chefs from Grounded Table will share their take on pairing lamb with sparkling wines.
